Steer the fastest angle, not necessarily the lowest: VMG mode when the leg pays to sail high and wait, hot deep angles or by-the-lee when the wave lets Oh! surf. Keep the main at the edge of luffing (Trim the main continues downwind — Helm holds both strings from the helming seat), and keep the footstep dialogue with the sheet trimmer: pressure in the rudder, the mode he needs, the puff that’s coming.
